Quick & Easy Lunch: Trio of Toasts

As I mentioned in my Green Spinach Smoothie post, I was at the gym the other day thinking of what fancy salad or veggie bowl I would prepare for lunch, once I would be done working out. But when I got home, all I wanted was that smoothie I had been craving for days! Even though that smoothie is rich and filling, it wasn’t going to be quite enough to satisfy my crying stomach. So I decided to make something light yet crunchy to go with it. 

It’s actually a little funny because the base I used for these toast are this gluten-free buckwheat crackers (for a better lack of word) that come all the way from France. Not only have they traveled with me all the way across the Atlantic, but they’ve also been all over France. This summer I spent three weeks in France: starting in Paris, then in my family house in the Basque Country, then in Provence, and back to Paris. Early on during the trip I bought this gluten-free crackers thinking I would eat them everyday instead of eating baguettes. But of course it’s extremely hard to resist the smell of a warm baguette straight out of the oven, that you get from the village’s boulangerie every morning. Let’s just say that I indulged here and here, and didn’t end up eating my buckwheat crackers as much as I had planned to. But since they are really good – light and crunchy – and I don’t like wasting food, they tagged along throughout the entire trip and even made it to America.

I’m very happy I kept them the entire time because they were the perfect solution to complement my green smoothie. This trio of toasts is ideal if you have a small appetite and are looking for something light and fresh, yet so nutritious! I used Trader Joe’s organic hummus as the primary layer; topped it off with radish, cherry tomatoes, and cucumber; and sprinkled some fresh dill, coarse sea salt and pepper on top. Simple perfection, truly! In fact, this meal inspired me to start a new series of “Quick & Easy” recipe ideas for those days when we either don’t have a lot of time, or simply don’t want to spend hours in the kitchen fixing up something healthy and tasty of ourselves. Hopefully you will realize that eating well and enjoying what you eat is not necessarily synonym with dedicating an entire day to cooking. And the possibilities of toppings for these toasts are endless, so please be creative!

Trio of Toasts – serves: 1 | prep time: 5 min | cooking time: none


  • 3 GF rectangular crackers (you can also use bread slices or rhye crackers or anything you prefer)
  • 1 radish
  • 3 cherry tomatoes
  • 4 slices of English cucumber
  • 3 tbsp of hummus
  • a few sprigs of fresh dill
  • coarse salt & pepper to taste


Start by cutting the radish into thin slices, the tomatoes in half and 4 slices off the cucumber.

Then spread 1 tbsp of hummus on each of your crackers. Layer the sliced veggies on top on each.

Sprinkle the dill, salt and pepper.

That’s it. Done! :)
