2016. February. Valentine’s Day just around the corner. Wow, it’s been way too long since I last posted a recipe here. Of course I could follow the path of guilt and feel bad about not being more consistent with my blog posts… Or I could make a commitment NOW that, as of Tuesday February 9th, I will post at least one new recipe every week. Yup, you all heard me – and by all I mean the 5 of you that actually read my posts – every Tuesday you can expect a new recipe!
Since my last post, the anticipation of Christmas came and went, and a new year was celebrated. For some reason I am very hopeful of 2016. I know, you might think that I say that every year, but this time around I have a strong gut feeling that 2016 will be full of fun adventures and travels, big projects in the making, and deep connections being established. Connections both to the self and to the Universe as a whole. I’ve been yearning to embark on a spiritual journey to reconnect with my inner being, and to find balance in my life. What better time to celebrate self-love then in February: the month governed by Cupidon.
Although Valentine’s Day may be seen by many as a commercial holiday – sponsored by Hershey’s and Hallmark – I find it nice to dedicate an entire day to Love. Too often in our busy, crazy lives do we forget to show ourselves and others love and kindness. So why not use February 14th to remind those who matter how much they mean to us and how much we care about them. And that goes for reminding yourself too! I am often told that I am too hard on myself, which is why I want to get into the habit of being grateful that I have a healthy and functioning body. In the spirit of kindness and gratitude I figured I should treat my taste buds to a healthy chocolate snack – and so should you!
These chocolate-covered rice crackers are the easiest and most delicious snacks you could indulge on for V-Day. They’re the perfect alternative to a store-bought box of heart-shaped chocolates (aka full of sugar and conservatives) for your loved ones. But if you prefer eating the whole batch to your face, I won’t blame you. And neither should you, because these are both nutrionally healthy and flavorful!

Chocolate Rice Crackers – serves: 15 rice crackers | prep time: 10 min | cooking time: 5 min
15 brown rice crackers, preferably thin ones
8oz dark chocolate – use good quality chocolate with 60% cacao or higher
2 tbsp coconut oil
1/3 cup goji berries
1/3 cup chopped pecans
2 tbsp shredded coconut, unsweetened
coarse sea salt, to taste
Begin by laying the rice crackers on a couple baking trays of a few large plates.
Then melt the chocolate with the coconut oil in a double boiler – using a glass bowl over a pan of simmering water – for about 5 minutes. Stir well using a wooden spoon.
Once the chocolate is completely melted and liquid, use a tablespoon to scoop it on the crackers. Spread the surface evenly until completely covered. Repeat this process for all the rice crackers.
Quickly add the toppings while the chocolate is still in a liquid form and hasn’t hardened yet.
Place the baking trays in a the fridge for a least 15 minutes, until the chocolate solidifies. Keep stored in the fridge to prevent the chocolate from melting.
