Raw Cacao Energy Bites

March 31, 2016

Energy. It’s all around us. It’s within us. It fluctuates. It’s not something we can fully grasp, yet we can feel it. You either have an excess of it, or a deficiency. How much energy you have usually depends on how much you’ve slept the night before and what you eat. I don’t think the majority of people realize how much more energized you feel when you eliminate processed foods, refined sugar, meat, and processed carbs from your diet. We’re always striving for more energy, yet tend to look for it in the wrong places: coffee and  refined sugar, mainly. What if I told you there was another solution…

These raw cacao energy bites are the perfect pick-me up snack. And guess what? They only contain the good stuff: omega 3-filled ground flaxseeds, fiber-rich dates, mood-lifting cacao, healthy fats-loaded almonds and coconut, and energy-booster chia seeds. Naturally sweetened, they taste like heaven. The best part, they’re so easy to make!

Keeping it short and sweet today. Just like these little treats. :)

Raw Cacao Energy Bites – serves: a dozen | prep time: 10 min | cooking time: none

  • 10 dates, pitted
  • ½ cup raw almonds
  • 4 tbsp ground flaxseeds
  • 2 tbsp chia seeds
  • 2 + 8 tbsp shredded coconut, divided
  • 2 heaping tbsp raw cocoa powder
  • 2 tbsp sunflower butter (almond or peanut butter works too)
  • 1 tsp coconut oil
  • few pinches of coarse sea salt
  • 1 tbsp of almond milk
  • splash of filtered water

Put all the ingredients (except for 6 tbsp of shredded coconut) in a food processor and blend until reaching a uniform paste. You will probably have to stop a few times and scoop the sides of the blender. Add a splash water if you find that the ingredients don’t mix together very well. The mixture will be ready once all the almonds are finely chopped and there are no larger pieces left.

Place 6 tbsp of shredded coconut in a shallow plate. Use a large spoon to scoop out just enough of the paste to form little balls. Roll each ball into the shredded coconut until uniformly covered. Place the balls into the freezer for about 10 minutes, or until they harden.

Indulge right away or store in an airtight container in the fridge, for about a week.
